Hare Hollow specialty oils and vinegars are great tasting favorites at PAFM. If you’ve not yet dipped a piece of bread into their Date-Fig Balsamic vinegar or the award-winning Organic Late-Harvest Mission Extra-virgin Olive Oil, then you’ve not yet fully experienced all the Market has to offer. Hare Hollow is a special place near Healdsburg, where Esther Pruitt transforms olives and grapes into the delicacies that she, Gina Beltz, and Cheri Jimerson sell at PAFM. Esther works with a statewide cooperative of olive and grape farmers from whom she buys quality raw materials. This enables her to produce the wonderful blends she features at her stand. Esther first learned about olives working at the “Olive Press” in Glen Ellen, and then went on to launch Hare Hollow with two specialty olive oils. Over the years, her business community contacts put her in touch with more olive farmers, as well as vineyards, and she expanded her line to include more oils, as well as specialty vinegars, a natural pairing for her oils. Esther started selling at PAFM in 1998 and keeps coming back because she loves the “great community [and customer] support, the team players and volunteers, not to mention the variety offered at the Market.” She says it’s “nice to see a non-profit group (the PAFM) give back to the community and the senior program.” On a personal level, “my love of cooking keeps me going after seven years, sharing with the community and others who enjoy good food.”
